Watermelon cake pops



I FINISHED MY ECONOMETRICS PROJECT!!! If you have been within a 20 feet radius of me within the last week, I apologise now. No one deserves that much economics bombarded on them. (Sometimes I wonder if I deserve to have this much economics bombarded on me.)

And so to celebrate, I am rewarding myself with a new post on here :)

I made these a while ago when I made the first 'accidental cake pops', which is where you can find the basic recipe.

When I made these at a family barbecue, all of the comments where 'oooh, what lovely strawberry cakes!' They're meant to be watermelon.

Well, maybe it could look a bit like strawberry from far off...

Actually, nope. Definitely watermelon.

Also, I also made this as I know that now the weather is warmer many of you feel inclined to eat more fruit. This counts as one of your five-a-day, right?

As you can see, the first photo is one that I used to make my subscription button (somewhere to the right of where you're looking now). Feel free to sign up by email too! It's not like that button and all the web coding (which I do not understand, so this makes me, in web language, a n00b?) took me 3 hours to make or anything. I'm just sayin' :)


All I remember when I made this was 'boy did I underestimate how long it look to ice these things'. I don't have a proper cake pop stand so it was hard to ice all around it without getting icing stuck to my fingers (yummy at first, annoying and sickly after half an hour), but I managed to get one side decent enough in the end to take photos of.

So if you are going to make them, my tip is to put them on cake pops sticks first (I actually used bamboo skewers), stick them in some polystyrene, then ice it that way.




I know many of you aren't fans of using food colouring in baking, but I didn't really know how else to colour the icing pink. I was considering using beetroot juice, but the last time I did that I got a nice big stain on my white trousers (it was inevitable), so I'm scared of going near them.


The flesh of the watermelon is lemon curd (I got lemon food withdrawals after I made the chocolate and lemon tart so I went out and bought this - I fear I am now addicted to them), which I dotted on with chopsticks. I was cooking with my friends the other day and they found it amusing how I dot things on with chopsticks. We were making fajitas and I was making chocolate cake, but still ended up finding a use for chopsticks (I was positioning rice krispies to write a message, I mean, how else would I do it?)

Like I said in my last post, that's just how I rolllllll :D


Recipe for the cake can be found at the bottom of this post. All you need to do is shape the cake pops into triangles, make up a quantity of coloured icing (I used icing sugar, red food colouring and water for the flesh, green ready rolled icing for the skin, and black piping icing for the pips), and go ca-razy!

  3. Very clever! I went to a workshop on cake pops at the Nottingham Food Festival back in the Autum, she made it look SO easy but she had all of the funny stands and other random specialist tools lol!

    I'll have to give these a go once exams are over :)

    @EmmywI know! I used a polystrene block as my stand and some BBQ skewers (no student can afford all of those specialist equipment!), but yes do try them, I'd love to see how yours turned out :)

  7. Think of this icing project as a trial by fire for the endless studies and meetings coming up in your career as an economist ... a lesson in patience and perseverance, albeit WAY more yummy! And, by the by, they def look like watermelon slices, not strawberries ... ;-)
